Last night I made Cauliflower Tabouleh and it was a hit! I also got a high 5 for fooling my family, they all came to the table saying mmmm couscous. When dinner was finished I said it wasn’t couscous it was cauliflower whizzed up to look like couscous. My friend’s family love tabouleh, she has started making this version…..apparently they hate cauliflower- she still hasn’t told them it’s actually cauliflower and not bulgar wheat!

Here’s my recipe….

Cauliflower prep…

1 head of cauliflower (taking the florets only)

1-2 tbsp of parmesan cheese

salt and olive oil

Whizz cauliflower in a blender until it resembles a rice texture. Pop in a bowl and stir through 1-2 tbsp of olive oil. Spread out on a tray and sprinkle parmesan cheese over top. Then grill until lightly browned. Let cool.

Other Salad Ingredients

While cauliflower is cooling prepare the rest of the salad.

1 teaspoon Lemon zest

1/4 cup Lemon juice

1/4 cup Olive oil

1/4 teaspoon Black pepper (coarsely ground)

1 teaspoon Salt

1 bunch of Parsley (finely chopped)

Few leaves of mint (to taste)

3 Tomatoes (cubed)

Place cooled cauliflower in a serving bowl and stir through the other ingredients.

Serve!
